I no longer use bagged cheese (coatings harm melting, flavor) so have tried a variety of techniques to grate blocked cheese. Food processors create some quality issues. Box graters are slow and incorporate parts of your knuckles into your cheese (while this provides additional protein, it can have other drawbacks). SO – I tried several grating devices with limited results: some did a poor job on the cuts, others jumped all over the counter, limiting their effectiveness. Then I tried THIS ONE! HOORAY! It is stable, cuts beautifully, assembles quickly, disassembles quickly for excellent cleaning… and it’s even FUN. I not only do not hesitate to do recipes with shredded cheese, I look for them. I have considered offering cheese shredding as a service to family and friends (even acquaintences). It’s cutting heads give a perfect variety of methods of dismantling ingredients.
