5.0 out of 5 stars Cuts tomatoes paper thin with no added pressure put on the knife to do so! I have used the German Henckels knives for about 20 years. Was never really impressed with them but they also weren’t the top of the line (only two men engraved on the knives). I have a few Pampered Chef knives as well and they work very well. However, I wanted a really good sharp knife that I could write home about! I did my research and this one was highly recommended. When I got it, I immediately took it out of the box, washed it, and put it to the test with a ripe tomato that starting to get a little wrinkly looking. I was shocked!!! I was able to cut such thin little slices that I could see through them. Not just just one or two slices, but the entire tomato. I didn’t have to put any pressure on the tomato to break the skin, I didn’t have to do a lot of sawing motions either. I was so excited about it that I wrote my mother and told her what I had gotten and how impressed I was by it. I don’t plan to use it on “meat/poultry/fish” bones, but I have no doubt that cutting boneless chicken breasts or boneless cuts of any meats will be a breeze. I like the length of it. Not too long, not too short. The balance is perfect. I’m looking forward to using this a lot more and if anything changes, I’ll try to remember to come back with an update. Well balanced, with comfortable handle & nice overall weight (270gr / 9.52oz) & feel. We use it professionally to cut up vegetables for a parrot sanctuary and preserve. Claimed set at 15° which is typical for Japanese chef’s knives but I measured it at 11° with my laser goniometer. That’s more appropriate for a straight razor, and too delicate for vegetable cutting.
