The Verdict
The HOSHANHO 5.5 inch nakiri knife is a precision-crafted Japanese kitchen tool designed for effortless vegetable preparation and versatile slicing. It combines high-carbon steel durability with an ergonomic pakkawood handle, making it a reliable addition for those who value both aesthetic appeal and consistent cutting performance.
Why We Love It (Key Features)
- Precision Blade Geometry: Each blade is hand-polished to a 15-degree angle, which significantly minimizes cutting resistance to ensure your slices are smooth and effortless.
- High-Carbon Durability: Crafted from 10Cr15CoMoV stainless steel and vacuum heat-treated to 60HRC, this blade is built to maintain its sharp edge even through heavy, repeated kitchen use.
- Comfort-Focused Design: The ergonomic pakkawood handle is weighted to balance perfectly with the blade, reducing hand fatigue during long prep sessions.
- Non-Stick Performance: Featuring scallop-shaped hollow pits along the blade, this knife prevents food from clinging to the side, allowing for a more efficient chopping and dicing experience.
Pros & Cons
- Pros: Excellent balance and ergonomics, high-hardness steel for edge retention, and a functional non-stick scallop design.
- Cons: At 5.5 inches, this specific blade length may feel limited for those accustomed to larger 8-inch chef's knives, and it requires careful maintenance to protect the quality materials.
Who Should Buy This?
This knife is an excellent choice for home cooks who prioritize precision in their vegetable prep and want a tool that looks as good as it performs. It is particularly well-suited for someone looking to upgrade to professional-grade high-carbon steel without the bulk of a traditional, larger-sized chef's knife.

5.0 out of 5 stars Cuts tomatoes paper thin with no added pressure put on the knife to do so! I have used the German Henckels knives for about 20 years. Was never really impressed with them but they also weren’t the top of the line (only two men engraved on the knives). I have a few Pampered Chef knives as well and they work very well. However, I wanted a really good sharp knife that I could write home about! I did my research and this one was highly recommended. When I got it, I immediately took it out of the box, washed it, and put it to the test with a ripe tomato that starting to get a little wrinkly looking. I was shocked!!! I was able to cut such thin little slices that I could see through them. Not just just one or two slices, but the entire tomato. I didn’t have to put any pressure on the tomato to break the skin, I didn’t have to do a lot of sawing motions either. I was so excited about it that I wrote my mother and told her what I had gotten and how impressed I was by it. I don’t plan to use it on “meat/poultry/fish” bones, but I have no doubt that cutting boneless chicken breasts or boneless cuts of any meats will be a breeze. I like the length of it. Not too long, not too short. The balance is perfect. I’m looking forward to using this a lot more and if anything changes, I’ll try to remember to come back with an update. I would recommend this item so far though!Variation: Size: 7"

5.0 out of 5 stars Extremely sharp and well balanced. Very sharp. Hand wash and dry throughly with a towel. Use precaution to store the knife to protect the edge from being damaged. I’m very pleased with the knife and its performance.Variation: Size: 7"

5.0 out of 5 stars very good value High quality professional chef’s knife – very good steel, takes and holds an excellent edge. Well balanced, with comfortable handle & nice overall weight (270gr / 9.52oz) & feel. We use it professionally to cut up vegetables for a parrot sanctuary and preserve. Claimed set at 15° which is typical for Japanese chef’s knives but I measured it at 11° with my laser goniometer. That’s more appropriate for a straight razor, and too delicate for vegetable cutting. I recontoured and honed it to 15°.Variation: Size: 7"
