The Verdict
The Viking 3-ply stainless steel oval roasting pan with lid is a versatile 8.5-quart culinary workhorse designed to handle everything from holiday turkeys up to 14 pounds to everyday stovetop sautéing. Built with multi-layer clad metal and a dual-purpose lid, this cookware delivers even heat distribution alongside the flexibility to roast, braise, or serve directly at the table.
Why We Love It (Key Features)
- Versatile 3-in-1 Design: Beyond serving as an open roaster with an elevated wire rack that hangs from the rim for simple draining, attaching the metal induction lid converts it into a 9-quart (to rim) covered roaster, stockpot, or dutch oven. The lid itself doubles independently as an au gratin dish, sauté pan, or casserole serving vessel.
- Durable 3-Ply Clad Construction: Built with a non-reactive 304 stainless steel interior, an aluminum core, and an induction-compatible stainless steel exterior, it delivers balanced heat distribution up to 600°F (315°C) across gas, electric, ceramic, halogen, and induction cooktops.
- Table-Ready Aesthetic with Practical Details: A polished mirror finish and rolled edges allow for drip-free pouring and seamless transitions from the oven straight to a buffet display. Inside, stamped volume markings in quarts and liters make measuring liquid additions straightforward.
- Secure Handling: Sturdy die-cast side handles give you a reliable, confident grip when transferring heavy roasts into and out of the oven.

5.0 out of 5 stars The Stuff of Dreams When I was growing up, I remember my mom wistfully pining after Viking pans she saw on professional cooking shows. I went in search of a new roasting pan for Thanksgiving this year, and knew that I wanted to never have to buy another roasting pan again. I knew that I wanted a rack and a lid, and that it had to be built to last. Enter the Viking 3-Ply Stainless Steel Oval Roaster with Metal Induction Lid and Rack, 8.5 Quart. I am so pleased with this purchase! It is heavy duty, and certainly built to last. It’s multi-functional. And it’s so pretty! I will say that it is smaller in person than I was expecting, but I went over the reviews and Q & A’s carefully, which said it can take a 16lbs bird. I’m very excited to find out!Variation: Style: Oval Roaster with Metal Induction Lid
5.0 out of 5 stars Great roaster! This pan made the easiest turkey and cleanup I’ve ever had–no basting, no messy foil package to achieve the steam pressure cook, moist turkey, and easy cleanup. The turkey was delicious. A 14-pound turkey fit well. I cooked it 2 hours and 15 minutes at 400 degrees, and it was totally done (maybe I could have stopped sooner, but it was still plenty moist) except for the crisping and browning, so I removed the pot lid and cooked another 20 minutes or so. The turkey was perfect. I forgot to put the rack in, but it didn’t really matter. I cook the turkey in the shallow pan and cover with the deep pan to maximize browning at the end. Cleanup is a breeze after a little soaking. The roaster is beautiful too.Variation: Style: Oval Roaster with Metal Induction Lid
5.0 out of 5 stars So Versatile! For many years I had a cheap enameled roaster. What a difference! This is substantial, easier to clean, and lets face it, pretty. I absolutely love the lifting rack that hooks securely on the pan. I have a gas stove top for now, but eventually will get an induction, and it’s great to know that this will work on either. The lid that doubles as a shallow pan is fantastic. Viking is pricey, but oh so worth it.Variation: Style: Oval Roaster with Metal Induction Lid
5.0 out of 5 stars Brilliant Turkey Roaster! The most excellent Turkey roaster! I used this for the first time for Thanksgiving, and it was absolutely brilliant for roasting potatoes in with the Turkey. They came out crispy and delicious! The lid is an added bonus too, you can use it for servicing up sliced turkey. And you can cook on it as well. Such a versatile cooking vessel. The stainless steel is impossibly shiny and gorgeous! I adore this pan and for the price it was a good investment, it will be good in my kitchen for many years to come. 5 stars!Variation: Style: Oval Roaster with Metal Induction Lid
5.0 out of 5 stars Must have roasting pan This is a very nice roasting pan. The pan is thick and sturdy and the top can also be used as a pan. The pan comes with a wire rack which is also very sturdy. This is a large pan and was big enough for a 14 lb. turkey. I wish I has invested in this pan sooner.Variation: Style: Oval Roaster with Metal Induction Lid
5.0 out of 5 stars Heavy duty, easy to clean It is expensive, but it should last a long time. Its multi-use as a roasting pan, dutch oven, frying pan justifies its cost.Variation: Style: Oval Roaster with Metal Induction Lid
5.0 out of 5 stars Excellent Roaster I changed everything in my kitchen to Viking in December 2024. Pots, pans, mixing bowls, and the kitchen tools. It’s a great brand and I wish I would’ve gotten this roaster back then too. I usually cook my chicken French style, spatchcock over vegetables, but with this I am leveling up my roasting game. I open roast to crisp all sides and I am able to use the top for dressing or a casserole. I put my veggies, stock, and wine in and adjust the rack to hang above the veggies. I do my basting and when the chicken is done I move it stove top on low heat and remove everything to start my gravy. It’s genius to be able to go oven to stove top.Variation: Style: Oval Roaster with Metal Induction Lid
