5.0 out of 5 stars Excellent and more than worth the price Excellent knife — and I have had French Chef knives for more than 50 years and this one is top end for handling and especially for sharpness. The 13 degree knife edge is incredibly sharp and goes through onions without crushing the juice out, so no crying. Also slices tomatoes so thin you can see through them! Easy clean up and unlike my old carbon steel knives, which are also razor sharp, this one doesn’t appear to be troubled by cutting high acid foods. The “pinch grip” is my long-standing way to use these knives because it gives you excellent blade control and the handle and blade design work great for that. All in all, especially for the price, these are great knives to anyone who regularly uses a French chef knife. Only word of caution — they really, really are sharp, so sharp if you use the blade to lift veggies off the cutting board, you have to be careful not to cut the board!Variation: Size: 8"

I cook quite a lot and sharp knives that hold their edge are very important to me since a sharp knife is much safer to use than a dull one. I have quite a few knives in my collection that include some of the more expensive ones such as Shun. In my search for knives a few years ago, I learned a lot about the metals used for knives, the importance of the angle of the blade, and the forging of the blades that held the sharp edge for the longest.I decided to try the Hoshanho knives, in spite of the lower prices on sale, since they met all of the criteria for high quality knives. In the past, I have tried quite a few of the higher priced brands, and found that many of them had to be sharpened out-of-the-box. I have used this knife a few times, and it cuts through everything easily with no effort, including tomatoes, potatoes, roast, etc. This chef’s knife is my most used knife for cutting, chopping, slicing, and dicing, and I am very much impressed with the ease all of these tasks have been accomplished.I have ordered a few of the Hoshanho knives after initially ordering a couple of them. I am blown away by the sharpness of these knives when I received them. I love the appearance of these knives with the Pakkawood handles and the weight of them is perfectly balanced. A simple rinse with hot water is all that is needed to clean them.
