The blade is very sharp and easily cuts through meat and fat alike. The negatives, which resulted in 4 stars as opposed to 5…It is a little heavier than I feel it should be to have complete control when cutting. The plastic sheath that comes with it has already been cut just from everyday use, which is a nod to how sharp the knife is but also shows how flimsy the sheath is. It is also a little too long for a boning knife. Overall I would recommend this knife but just keep the negatives in mind.Variation: Size: 7"

Surgical sharp out of the box. In have owned around 75 or so fillet knives over the last 40 years n this is the second sharpest.Feels solid in the hand, some flex, but enough stiffness to effectively skin fish. Its slightly heavier than it looks, but well balanced n fits my hand well.My first cut was an onion in the kitchen. It tracks straight n requires almost no effort to slice, but i cant write a review just on that.Got 10 croakers n spot yesterday. I fillet them by cutting thru the ribs n removing them after the skin. Its hard on a knife n requires frequent sharpening, but its fast.After 10 fish this knife was still sharp enough to glide thru the the fillets without any effort n felt just as sharp as when it arrived.This knife doesn’t include a scabbard so please be careful transporting it.Variation: Size: 7"

So often I have had to sharpen some of them when I first got them. Not this knife!! It was razor sharp out of the box. When I first started buying the more expensive knives, I did a lot of research to learn the best metals for knives, how they should be made, and the benefits of different blade types and blade angles.So, what do I like about this fillet knife?1) It is made of the best materials to make it durable and maintain sharpness for longer.2) The blade is very thin and works well for trimming fat from meat, slicing, and cutting pockets in chicken breasts and pork chops for stuffing.3) The blade is a 15 degree angle on both sides. Some knives have the angle on only one side and are flat on the other side. In addition, the smaller angle make it much sharper than the wider angle of European knives.4) The PakkaWood handle is not only attractive, but the shape of it is easy to hold and use and is well balanced.5) This knife comes with a plastic sheath that protects the blade of the knife if stored in a drawer.Since I was so happy with the first Hoshanho knife I purchased, I have purchased a few of the different styles. I have found all of them to be of the same exceptional quality. I’m sure this knife will need sharpening eventually – all knives do. At this point I am very happy with this knife, and would definitely recommend it. The blade has a nice shape for working around bones and making clean, controlled cuts, which makes fish preparation much easier than using a regular kitchen knife.What I like most is the balance. It feels comfortable in the hand and gives good control, especially when doing more detailed cuts. The blade moves through fish smoothly and doesn’t require a lot of pressure, so the whole process feels quicker and cleaner.
