Probe Control for wet cooking

Directly sensing the temperature of the ingredients, Probe Control can set and hold the temperature stability of ingredients to within +-1.8ºF. Ideal for 'wet' cooking and remains accurate in liquids as shallow as 5mm deep. In delicate applications such as making curds, cremes, emulsified sauces or even tempering chocolate - Probe Control ensures success through precise temperature control.

Probe Control Oil for frying

Directly sensing the temperature of frying oil, Probe Control Oil can set and hold the temperature stability of the frying oil to within +-1.8ºF. Ideal for deep frying. Because the probe is monitoring the temperature of the oil directly, any change like adding cold or frozen food is detected almost immediately. Power is applied and regulated to return back to set temperature as quickly as possible.

Pan Control for all cooking

Only constant monitoring and the finest adjustments to power can ensure stable temperature. The Control ºFreak checks temperature 20 times per second to make virtually instantaneous adjustments to power to keep temperature variation to a minimum. Whether you are toasting spices & nuts or searing steaks, Pan Control ensures the perfect doneness every time.

Engineered for reliability

Any commercial cooker needs to perform hour after hour at very high temperatures, but if a regular induction cooker gets too hot it cuts out. The Control Freak's twin fan cooling system keeps you cooking all night even at searing / frying temperatures in the hottest kitchen.

(continued)

Control heat intensity

When cooking delicate dishes you often need to raise the temperature slowly to distribute heat evenly. When cooking at searing temperatures you often need to heat up fast. With the Control ºFreak you can automatically adjust the speed to set temperature like never before.

Create. Save. Repeat.

On any given day the Control ºFreak may be used for any number of dishes on your menu. Now you don't have to remember the cooking times and temperatures, you can save them and recall them as required, or copy them to other machines for repeatability and consistency.

Tougher than a restaurant critic

It doesn't matter if it's heavy knocks, hot spills, or pots weighing 200 lbs, this machine is meant for the commercial kitchen. With and extra thick skin of commercial grade stainless steel and a heat-resistant Tritan display, the Control ºFreak is tough enough to take all of the punishment your kitchen can dish out!

    EXCELLENT

5.0 out of 5 stars I love this thing I love my Breville Control Freak. It gives me an additional 10-inch burner, since my built-in, 30-inch induction cooktop only has one burner that size. But more than that, it lets me set specific temperatures and turns out the best omelets ever, not that one should have to spend $1500 to get an omelet maker. I use it for many other things, as well. It’s fun, if things like this can actually be fun. It’s one of those things you don’t NEED in your life, but if it’s in your budget and you want it, it’s a nice addition. The price seems insane, but the product seems to be built well.My main reason for adding this review is to give another opinion on Demeyere Atlantis and Proline pans operating on this device. I have had no issue with my pans, but they are rather new (last couple years). I can’t remember where I read it, but at some point in the last 10-15 years, Demeyere changed something in their pans so that they work even better with induction. Could this be what is causing the problem for the other people having issues with it? I don’t know. But I have tested multiple Demeyere Atlantis and Proline pans on mine, and they all work and give no errors. I can’t answer whether there is an issue with these other users’ devices or if it’s the pans themselves, but don’t let a couple reviews deter you from buying. If you have those pans and it ends up not working for you, Amazon will take it back within 30 days. I feel bad for the couple people who have had the issues, though. I would be upset about it, too, as this Control Freak gives this control freak a lot of joy! You could only pry it from my cold, dead hands.Variation: Style: Cooking System

5.0 out of 5 stars The absolute best induction cooker This is my third induction cooker, and hopefully my last. The first two cookers were not exactly what I expected. Temperature control was terrible, only small cookware could be used, no features other than a timer. This Breville Control Freak is like cooking on a gas stove, but MUCH MUCH better. This thing is precise, very precise. It is programmable,. allowing for pre-programming setting for boiling eggs the way you like them, perfect rice, awesome seared meats and much much more. This thing is just perfect. You can control how fast it heats up to prevent warping your valuable cookware, it gets super hot on high, works well with all inductive cookware from cast iron, stainless steel, carbon steel and inductive cookware. It uses a standard 120V wall plug and is very portable. I have even used it several time using a portable power station. Boiling water is super fast, and simmering foods is like on a gas range. Oh, I forgot, it is built like a tank. Super, fantastic build quality. It come complete with a terrific padded suitcase like bag that will definitely protect it in storage and transportation. It also had a temperature probe that has a neat holder for clamping it to the side of your pans/pots. It also had a built in temperature sensor at the center to the cooking surface to monitor the temperature of the cookware for precise control. It is super quiet and very energy efficient. I can’t say enough about this thing. I would give it more stars if I could. It is worth every penny spent, it is, regardless of the price, a great value for what it can do.Variation: Style: Cooking System

5.0 out of 5 stars Breville Control Freak Worth the high price! About a month ago I purchased an induction cooktop for $160. It didn’t heat very evenly but I saw potential for this technology. I returned it (thanks amazon) and purchased the Bentley model, the Control Freak commercial. I am not sure what the difference is between the commercial and the Home version besides the controls being different. It seems that the price is the same. I have been very pleased with this cooktop. In the past it was an exercise in adjusting the fire on the gas range to try to hold the temperature but the control Freak does it for you. It takes a while to learn what temperature to use but the temperature control readout gives you an idea such as simmer, medium high etc. For searing I have found that 365 works well and for the very difficult task of cooking a French Omlet 225 is about right. For egg based sauce such as hollandaise 185. I use this cooktop every day with excellent results. It is not very heavy so is easy to move and store. Mine stays on the counter all the time ready for use! If asked if there is a down side I would say that the manual is very sketchy. Just some drawings. There is not much to guide you on your way. There are some You Tube videos and Breville has some suggested videos but they were somewhat exotic for what I planned to cook. Be careful with a recommended site called ChefSteps. I ended up unintentionally paying for a subscription. They say they will refund my $69. That is the only downside. You have to be on your own. I am learning more each day. Remember it is just a heat source and pretty intuitive.I have been using the Control Freak for over a month. I use it daily. No ccomplaints with the cooker. I was referred to “Chefsteps” by Breville. It’s a recipe site. I believe Chefsteps is part of Breville but not sure. I was charged $69 but was never able to get into the site. I tried to cancel before the 2 weeks trial was up but couldn’t get into my account. Sent messages to customer service but no reply. Called customer service and got a message that they would call me back in 2-3 hours. Its been over a week and no call back. Customer service is terrible. I don’t know it Chefsteps is Breville but Breville referred me to it. I highly recommend the Control Freak. Exxpensive but for me worth it.I have had the Control Freak for 5 months. It is my primary cooking device for sauteeing, frying and everything else.No longer do I have to tweek the gas burner to get the temperature right. I had to pull out my radient thermometer all the time to check the pan temperature. Now the Breville does that for me. workd well with a pan having a contact surface of 10 inches as the description claims. Only thing not so goodis that it is expensive but hopefully will last as long as I will need it.Variation: Style: Cooking System

5.0 out of 5 stars Amazing control freak! Amazing induction burner. Making infused oils is now such a breeze no adjusting temp or pan location on the burner. Just set the temp you want and how long to cook. Viola! Breville just got it right again!Variation: Style: Cooking System

5.0 out of 5 stars Pricey but the best This will change how you cook. Put a pan on the control freak, set a temperature, and get excellent & reproducible results. Want to deepfry or confeit? Just set the temperature, it regains heat quickly when you add food and won’t overheat, which is great for confeit garlic (45 – 60 minutes at ~215°). Or set it to simmer and the pan doesn’t really get hot enough to burn food at the bottom while simmering it down (I made a math error on expected weights & did an 80% reduction on a maranara instead of 50%, and it still never burned). The only downside is the price. It costs more than my oven… but having one great burner is better than four mediocre ones for most meals so it’s still worth it.Variation: Style: Cooking System

5.0 out of 5 stars A little pricey, but well worth it in the end. If you perform any cooking that requires precise temperature control and you don’t want to hover over the stove top during the cooking process, this is for you! It works amazingly for candy making. You can set the temperature you want for your mixture, and it will heat as fast or as slowly as you want. I’ve made candies, delicate sauces, and melted chocolate, all with precise temperature control. It stays wherever you place it and won’t move while you cook. Once finished, it is easy to clean, just simply wipe off any splatters. It runs quietly, making less noise than your stove hood on the lowest setting. Yes, it is a bit pricey for a conduction cooker, but well worth the money.Variation: Style: Cooking System
